If buttermilk isn’t readily available, you can easily make your own by mixing regular milk with lemon juice or vinegar. If you’re feeling adventurous, add mix-ins like raisins or herbs. 

Now that we have our ingredients, let’s preheat the oven. Preheating is essential because the buttermilk and baking soda activate quickly, and we want to ensure a perfect rise. Preheat your oven to 450°F (232°C). 

Mix 3 and 1/2 cups (420 grams) of unbleached flour, 3/4 teaspoon (3 grams) of kosher salt, and 3/4 teaspoon of baking soda. Whisk everything together until well combined. Then, add in 1 and 1/2 cups (337 grams) of buttermilk. Mix everything until your dough becomes shaggy. 

Next, lightly dust your countertop with flour and knead the dough just enough to make it less shaggy. Be careful not to over-knead, as this will make the bread tough. Transfer the dough onto a parchment-lined baking sheet or a greased Dutch oven. 

Now it’s time to bake! Place the dough in the preheated oven at 450°F and bake for 15 minutes. Then, lower the temperature to 400°F (204°C) and bake for an additional 25 to 30 minutes. Baking times may vary, but it is crucial to ensure the internal temperature reaches at least 200°F (93°C) to ensure all moisture is baked out. I recommend using a thermometer to check the temperature. 

Once your bread is done, let it cool for about 45 minutes before slicing and serving. The finished loaf should have a nice crust and a soft, moist crumb.
